Three chefs at Double Eagle

Coral Ocean Point Resort’s Double Eagle Restaurant has not one, not two, but three chefs in its kitchen, assuring diners a wide culinary selection for breakfast, lunch, and dinner.

Spearheading the trio of gastronomic experts is executive chef Eduardo B. Olarte, who has been tickling the palates of locals and tourists alike on Saipan with his grasp of French and Italian cuisines since 1986.

Also onboard is Japanese chef Lito Petonio, who has been making his sumptuous sushi rolls, scrumptious tempura, and delightful ramen on island the past 20 years.

Not to be outdone is chef Rey Bulaklak, who since coming to the CNMI in 1994 began perfecting a fusion of Chinese and Japanese cuisines.

Olarte said that having three chefs at Double Eagle Restaurant is in line with the hotel’s philosophy of giving diners what they want, in this case an outlet that can serve gourmet food from a variety of culinary influences—Italian, French, Japanese, and Chinese.

Currently, the elegant restaurant with a picturesque view of flame trees and the ocean offers buffet breakfast and a la carte for lunch and dinner.

The breakfast buffet costs $15 and has six hot entrees, four types of salad, and one soup. It is from 6am to 10:30am.
Double Eagle Restaurant’s a la carte menu, meanwhile, features a gamut of Continental, French, Italian, Japanese, and Chinese fare. Its top-of-the line steak is priced at $28, while everyone’s favorite, lobster, is $35.

Plans are afoot to have a Father’s Day brunch on June 15, and in a few months, the outlet may make Sunday brunch a familiar fixture at COP.

Double Eagle Restaurant comfortably sits 100 diners. Olarte has 12 cooks at his disposal with a waitstaff of six at the beck and call of customers.

Aside from walk-ins, Double Eagle Restaurant is also open for banquets, birthdays, christenings, and other functions. It is open from 6am to 10pm and major credit cards are accepted.
