Night Scent Restaurant was barely a year in operation when it was forced to shut down due to COVID-19 concerns.
Now, nearly a year into the pandemic, owner Lin Ming has reopened the Chinese restaurant along Coral Tree Avenue across Fiesta Resort & Spa Saipan, albeit for take-away only.
Before the coronavirus closed restaurants and other business establishments in the CNMI, Night Scent Restaurant was already slowly making a name for itself for its versions of sweet and sour pork and beef broccoli.
Lin said Korean and Chinese tourists frequented their restaurant not because of its proximity to Fiesta Resort and the nearby Hyatt Regency Saipan, but also for the authentic taste of its Chinese cuisine. Other customers were also drawn to the inviting aroma emanating from Night Scent Restaurant’s kitchen, which is actually one of the reasons they put the word “scent” in the restaurant’s name, according to Lin.

Night Scent Restaurant reopens with a new dish—her husband’s family’s fried chicken recipe—that is fast becoming a star. Lin said their fried chicken has been the toast of the town since they offered it in their take-away menu. She said, bar none, Night Scent Restaurant’s version of fried chicken is the crispiest, juiciest, and tastiest piece of chicken on island.
Like the colonel’s recipe, how her husband’s family’s fried chicken is made is proprietary information. She also shared that rumors that they copied the fried chicken of a certain Filipino fast-food chain known for its happy bee are unfounded.
“Our fried chicken recipe has been in my husband’s family for generations. My daughter tried Jollibee and of course has eaten our fried chicken. She said they’re somewhat similar in taste but our fried chicken is still the best,” said Lin.

Aside from their fried chicken, Night Scent Restaurant’s take-away menu also has chicken wrap, fried pork sausage on a stick, gold-colored steamed bread, braised chicken feet, oil-splashed noodles, and boba milk tea.
