Josie’s Catering is newest Kada Dia vendor

The familiar aroma of barbecue is wafting again around Kada Dia with the recent opening of Josie’s Catering.
The snack bar and catering service was opened by Josie Tengco last February and has since created a following for their one-of-a-kind sweet and savory barbecue and kapampangan dishes.
“We prepare a variety of food including barbecue, chicken inasal, silog menus, and many more. They’re all lutong kapampangan!”
Kapampangan food is from the Philippines’ culinary capital of Pampanga, which is famous for its fusion of Spanish, Chinese, and Filipino food.
Tengco also urges everyone to try their pork barbecue skewers and chicken inasal.
“Our bestseller so far is our own pork barbecue. We believe that our own recipe for pork barbecue has a unique and different taste. Our second bestseller is our own version of chicken inasal partnered up with sili (hot pepper) and calamansi.”
Chicken inasal is the way people from Bacolod, Negros Occidental cook their lechon manok. It is chicken marinated in a mixture of calamansi, pepper, coconut vinegar, and annatto then grilled over hot coals while basted with the same chicken marinade.
Aside from offering its delicious kapampagang menu in Kada Dia, Josie’s Catering also participates in popup stands in Sabalo Market, Tuesday Night Market, Night at the Museum every Friday, and many more.
Asked why open a business during the COVID-19 pandemic, Tengco answered, “why not?”
“There is no better time than now to start a business. I happened to start my business during the pandemic because of the time flexibility I had. It wasn’t really my intention to start it during a pandemic. I’ve always dreamed of having my own business and I thought why not give it a try now,” she said.
Tengco invited everyone in the community to sample their unique meals.
“Josie’s Catering always tries to achieve its best potential, especially when it comes to the food we sell. We make our own food with love and dedication so it’s sure to be delicious!”
