Veal is not something that you would usually see on Saipan’s menus much so veal that is cooked in its auntentico Italiano glory.

Lucky for us, Hyatt Regency Saipan is joining once again the celebration of the annual International Day of Italian Cuisines and not only did Giovanni’s serve up this year’s chosen dish during the world-wide celebration yesterday, it will continue on until the end of the month.

For its ninth year, Costoletta alla Milanese was served up by members of the Virtual Group of Italian Chefs all over the world, which includes Hyatt’s executive chef Gabriele Colombo—the only chef on island that is part of the organization.

“Every year we come up with this idea to feature authentic Italian dishes,” Colombo said.

Colombo, who is from Milan, said that the featured dish is something that could be found in homes as comfort food and as a traditional recipe.

Costoletta alla Milanese is a breaded and golden pan-fried veal cutlet. As simple as it may sound, the delicate flavor and texture of the meat cooked in the authentic Italian way is not something that could be taken for granted.

The white veal meat is about 10 ounces, pounded to about two inches thick and cooked with clarified butter, eggs, and fresh breadcrumbs. The result is a sumptuous dish made even more perfect when drizzled with freshly squeezed lemon.

The dish serves four people, depending on whether it is served as an antipasto or a main course.

According to Colombo, clarified butter gives the meat the buttery-like softness and flavor.

The veal, not typically found on island, is especially ordered by Hyatt for this event for the CNMI to enjoy.

Costoletta alla Milanese is perfect when paired with medium to bold flavored wines—Italian vinos are preferred, of course.

Share in the celebration and enjoy this special Italian dish priced at $35 per person. Club at the Hyatt members are welcome. For reservations, please call 234-1234 ext 26.
