It was a sweep for Aqua Resort when it bagged first place in the main course competition both in the apprentice and professional categories during Saturday’s Taste of the Marianas food festival.

Aqua Resort’s Rodel Alcantara prepared Roast Pork En Crepinette, Chamorro Rice and Ginger-Chili Sauce in the apprentice category. After almost two years of working as cook/steward and bartender, Rodel finally got to prove his ability to prepare a special dish for the competition. “I prepared it for two days and it was worth all the effort,” he says.

Aqua’s Demi Chef Joselito Bayking submitted Stuffed Chicken Breast With King Prawn, Pumpkin and Taro Sauce, his master recipe that earned him the first place in the professional category.

Aqua also placed second in the professional category with its Tenderloin and Prawn on Coconut Sauce Stuffed Duck Breast with Caramelized Ginger made by Ceferino Cascaida, Sous Chef.

Nikko Hotel bagged third place in the apprentice category with Celedonio Canlas’ entry of Poach Chicken Breast Stuffed with Shrimp and Chili Mousse with Cornet of Kumera Mash and Spicy Mango Sauce. In the professional category, Manolito Huevos also won third place for his Roast Rock of Pork with Chamorro Forcemeat, Breadfruit Gnocchi with Island Lemon Grass Vegetable and Coconut Cream Sauce.
