Aiko’s Ramen’s grand opening today
Jumping on the Japanese food trend, Joeten Enterprises ventures out into its own version of ramen, Aiko’s Ramen, situated in Susupe. The Japanese ramen shop is set to have its grand opening today.
Ramen is a Japanese soup dish made of meat, fish, or a combination of two or more broths mixed with miso or soy sauce and wheat noodles that are hand pulled. It is topped with Japanese sliced pork belly (chashu), dried seaweed (nori), bamboo shoots (menma), cured fish (Naruto), marinated soft boiled eggs (Hanjuku tamago), and/or woodear mushrooms (arage kikurage), just to name a few.
Aiko’s Ramen highlights authentic Japanese ramen, with handmade noodles and gyoza wrappers, made with local ingredients. The only exception is the sendai miso, which Aiko’s Ramen manager Emi Okazaki said is purchased in Japan.
Aiko’s Ramen has a variety of ramen dishes to choose from, with options ranging from authentic Japanese ramen to ramen with a local twist. According to Okazaki, one of the highlights of the menu is Aiko’s Original Coconut Ramen, an original creation by Okazaki.
The ramen shop offers noodles of varying thickness. Besides just ramen, Aiko’s Ramen also serves Tsukemen (noodles dipped in broth), Aburamen (soupless noodle dish flavored with oils and pork fat), and Yakisoba (fried buckwheat noodles).
A variation of noodles are also present at Aiko’s, with original spicy noodles called Tougarashi red pepper noodles, which spices up the experience of ramen for an additional 50 cents.
With a staff of one head chef, two line cooks, and six part-time cashiers, Aiko’s Ramen is sure to serve authentic ramen and a little more at a reasonable price.
Aiko’s Ramen head chef Ken Sato Tenorio was born on Saipan but grew up in Japan. Having prior experience in traditional noodle making in his father’s ramen shop in Japan, Tenorio comes back to his roots to serve quality Japanese ramen.
Aiko’s Ramen works in tandem with the third branch of Latte Café, which offers self-serve frozen yogurt.
Aiko’s Ramen is open from 11am to 2pm, and 5pm to 11pm.
