PIC to fete moms this Mother’s Day

This coming Sunday is Mother’s Day and the Pacific Islands Club is not letting this event pass by without honoring the most important member of the family.

The San Antonio landmark’s Director of Food & Beverage, Steve Balakrishna, said that PIC will have a Special Mother’s Day Sunday Brunch at The Magellan and a sumptuous five-course dinner at the Seaside Grill to commemorate the occasion.

From 11am to 2pm this May 11, the Special Mother’s Day Sunday Brunch at The Magellan will treat Mom, Dad, and their kids to a mouth-watering array of appetizers, entrees, and desserts expertly prepared by the hotel’s F&B staff led by its new Executive Chef Darren Ferrall.

For starters, Executive Chef Ferrall and his trusted deputy, Sous Chef Ceferino N. Cancaida, have prepared a salad and appetizer lineup bannered by Garden Mesclun Greens with a Wide Variety of Condiments & Dressings and Smoked Duck Breast-Ginger Orange Sauce & Smoked Ham Leg with Cranberry Sauce.

The entrees are no less stellar, what with Executive Chef Ferrall’s and Sous Chef Cancaida’s Darn of Salmon with Spinach & Goat Cheese and Grilled Mahi mahi Fillet Murrat leading the way.

The two meals will be complemented by Jamaican Jerk Chicken with Fried Banana & Sweet Potato, “Kalbi-Qui” Beef Short Ribs, Coconut Crusted Tilapia with Apricot Dipping Sauce, and Andouille & Kielbasa Sausages with Ratatouille—all guaranteed to tickle the taste buds of guests.

And for the celebrants, Executive Chef Ferrall and Sous Chef Cancaida have prepared Just Like “Mom’s” Pot Roast with Roasted Root of Vegetables—a sure-fire hit specially made for Mother’s Day.

For dessert, Pastry Chef Cary Alamudin’s Sanz Rival, Brazo de Mercedes, Creme Brulee, Mango Cake, Carrot Cake, and Apple Pie will be the rave of sweet-tooths and, as an extra, PIC will also have a Made-to-Order Banana and Mango Crepes Station.

Executive Chef Ferrall and Sous Chef Cancaida, however, are not done and the two said the Special Mother’s Day Sunday Brunch would not be complete without PIC’s all-time favorite Action Station serving as the centerpiece of the entire dining experience.

The two said the Action Station’s lineup includes Raspberry & Strawberry Belgian Waffles, Farm Fresh Omelets Made to Order, Mini Wok Station—Beef, Shrimp, & Squid, Island-Style Whole Roast Suckling Pig, Carved Steamship Round of Beef, Teppanyaki—Sirloin Steak, Chicken Breast Shrimp, Scallop & Vegetables, Pasta Corner with Choice of Condiments & Sauces, and Classic Caesar Salad Station with Herbed Garlic Toast.

The Special Mother’s Day Sunday Brunch costs an affordable $25 ($12.50 for children 4 to 11 years old).

Those who want to avail of PIC’s waterpark together with the Sunday Brunch only need to pony up $30 ($25 for children 4 to 11 years old) to avail of both, according to Balakrishna.

Mothers are also entitled to a raffle ticket for a chance to win a 20-inch colored TV, and overnight stay at PIC, and more in-kind prizes from the hotel.

PIC’s Mother’s Day offering at Seaside Grill, meanwhile, is also quite compelling to the palate, according to Balaksrishna.

He said Executive Chef Ferrall and Sous Chef Cancaida have certainly outdone themselves with their five-course Mother’s Day Dinner Menu that features Sesame Crusted Yellow Fin & Seared Scallop, Roasted Cream of Pumpkin Pie Nuts, Champagne Lime Sherbet, Mignonettes of Beef and Pan Fried Prawn, and Darned Salmon with Goat Cheese. For dessert, Frozen Banana Glace with Cashew Nougat will be served.

The Mother’s Day Dinner Menu costs just $40 and will be from 6pm to 9:30pm. It also includes a bottle of wine per couple.

Balakrishna is inviting PIC’s loyal patrons as well as newcomers to the San Antonio landmark this Sunday, May 11, 2008, for its Mother’s Day offerings.

Aside from the mouth-watering dishes, excellent service, and incomparable ambiance, PIC will continue to offer a 20 percent discount to local guests with valid ID.

The Mother’s Day holiday, in the United States, celebrates motherhood generally and the positive contributions of mothers to society. It falls on the second Sunday of each May.

It is the result of a campaign by Anna Marie Jarvis (1864-1948), who, following the death of her mother on May 9, 1905, devoted her life to establishing Mother’s Day as a national, and later an international holiday.
